The Owner of my cafe is greatly pleased with what I'm bringing in, and asked if I could make a Mocha for her friend,....this is my result. Not bad for someone self taught huh?ant pointers on how to keep this ball rolling?

Hello from Rutland, VT! [28 Jan 2009|09:51am]

I'm Phen,...a recently new addition to the staff of Clem's Cafe in Rutland, Vermont. I have made a point to research the local competition here in town as far as presenting a drinkable coffee or Esspresso, and I feel I bring something good to the table for each of us here in my community. I was a bit surprised to see so many exclamations of wonder at my latte etchings, ad Macchiatto art. It seems noone here has seen much of this and I find my afternoons and evenings filled with new customers, and greater tips. It's truly great to sling coffee here at Clem's! As a budding Barista I am pleased with the breadth and girth of the coffee world. I look forward to learning much from each of YOU my new friends!

The Beauty Of Coffee: A Look At Cafe Paramito [12 Jan 2009|10:38pm]


Tall green plants grow in rows along mountainsides dotted with red and green fruit, hand picked and placed in baskets by those working the field. The first thought is of a wine vineyard in the South of France or Coastal California. But, one would be wrong. It’s about coffee, something just as wonderful and romantic as the misty vineyards people see in the movies and on magazine covers. And, just as it’s special to find that fine bottle of wine from a little vineyard tucked away on the warm slopes of Sonoma valley or the cool hills of Mosel, Germany, you can find that special coffee bean grown on a family estate in Kenya or the Island of Java.

The Paramito plantation in Columbia has such a coffee bean. The plantation is split into smaller lots, which are mostly farmed by those that live on the land. This is a common practice in many of the finest coffee producers of the world. Even the famed Kono coffee of Hawaii- one of the most expensive coffees in the world- is grown on the land, and very much in the back yards, of the people who farm the beans, small plots of land in a greater collective passed down from generation to generation.

hello fellow barista's! my name is ally and i am so happy to finally find a community that fie-n's off of the same shit i do. i am a barista.. its my passion everyday to make each customers drink perfect and to their own liking.. [i love to customize drinks] and i do it close to 40 hours a week. im sure you all know what its like working 11 hours shifts and running the shop.
i work at a coffee shop in Delaware called Brew-HaHa. it is owned by a very nice lady that opened up her first shop in the 90's. there is now about 11 shops in DE and one in philly. we are ALL about making amazing shots, the best milk, toppin it all off with latte art, and informing our customers about all the amazing details in coffee. we have a great coffee roaster.
i have so much more to share.. but my main question for fun, is to know what is some of your favorite drinks to make? any crazy combinations?
one regular i have just moved from what we call a brewski [coffee with a shot or double shot of espresso], to a cafe au lait with a double shot of espresso.. right before band pratice every thursday.
i love being a barista.. there are many times i want to pull my hair out.. but at the end of the day, i am thankful for the greatness of coffee and regular customers that make the day great.. as long as good tips :]

Coffee Diet [10 Feb 2008|08:34pm]

I have a bit of a barista dilemma, and I'm hoping I can get some advice here. I just started working at a coffee shop near my new home in the state of Texas, which apparently does not require employers to provide their employees with breaks. As you can imagine, this sort of work can be exhausting in a popular indie coffee shop AND restaurant, working between 6 and 9 hours straight without so much as a moment of sitting down. This leaves little to absolutely no time for food.

So my problem is this: Before I started working here, I was eating regular meals at home. Now I'm lucky if I'm able to cram half a biscuit in my mouth while I wait for the dish sanitizer to finish its load. And so I've replaced breakfast and lunch with coffee. I'm surrounded by coffee, and it's free. I don't need to leave the counter area to consume it, and I don't feel ravenous by the end of the day when I've been chugging coffee all day.

However, I can no longer eat more than a small meal per day. Every day I come home, eat a relatively small amount of food and feel like I'm about to explode. I feel like this until the next day. Today I ate one pancake and a side of grilled potatoes after work and I still feel full 5 hours later. I'm thirsty, but I feel too full to drink anything. To make matters worse, I'm not sickly and losing weight or anything- if anything, I've gained weight. WTF. I'm not drinking mocha cappuccinos. Just regular gourmet coffee, occasionally cream/sugar.

Is this ridiculously unhealthy? Is replacing meals with coffee a terrible thing to do? Has anyone else experienced this? Is something wrong with me?

Advice on the non-tippers [08 Feb 2008|11:19pm]

I'm an experienced barista with 1.4 years at a former (RIP) busy local late night coffeeshop and a 3 month stint at starf*cks to boot! I know that tipping isn't mandatory, but when I have 5 customers in a row who I'm handcrafting lovely mochas and flavored lattes for and NONE of them tip a cent, I get a little peeved.

I'm working a new place. It's very nice, not even open a year yet. French presses, organic coffee roasted on the premises and so on. Nice, new and clean. So far every day I get these college girls (complete with name of socially-responsible university across the front of their shirts) and a few young professionals. I'm making the drinks right in front of them, friendly, professional and kind as f*ck, rocking the foams and giving their change (about 1 dollar 50 something cents worth) directly in front of the jar that says TIPS. The jar is always pre-seasoned with 1 or 2 dollars to make sure people get the idea.

I have about 7 of these customers daily (days are slow) and not a single one has ever tipped. I don't make minimum wage. Even with the help of my beautiful regulars throwing wads of ones in the jar (they all tip, every one of them... even if they're poor) I'm still far from minimum.

So, question is, what can I do to get the idea across to these privileged college students and professionals that baristas don't get minimum wage. It's getting to the point where I'm considering a letter to the editor of a local paper, because I have NEVER had so many well-off non tippers. Not at my local shit-hole-in-the-wall former coffee shop, not even at starbucks. I can always leave as a last resort, but whomever follows will have the same problem. I'm worried that there's a rumor flying around that the place does pay minimum, as I think they tried to when starting out and currently can't.

Should I learn the art of the latte and start writing "tips please" in the foam? I'm looking for some classy ideas here.

Any advice is welcome. Thank you. :)

a resurrection

hello! i'm 21, just got a job a few weeks ago at the wharf street coffee shop in tennessee. it's easily the best job i've ever had. we're not completely indie as we use SBC cups at a reduced price ... but our coffee is independent as well as our local milk (and we make our own menus, pricing, etc)!

soo the building is amazing. it's on the historical registry, built they believe around 1810, was originally a hotel by the name of the carmichael inn. they renovated the place and reopened as the carmichael inn restaurant and wharf street coffee. we have the original brick inside and outside the coffee house, while the original logs make up the restaurant portion of the building. they've been open a year, i've been there two weeks, and it's just great.

i've never been a barista before, so i'm new to this, but i've spent way too many nights reading proper coffee techniques online. and already, like most of you, i have a bit of resentment for the soccer moms hurriedly demanding a double mocha latte with skim milk (does that really help anything, ma'am?) ...  but, it's part of the job. i've met some really great people, including my 7am regulars asking dreary-eyed for a espresso doppio. i'm investing in some espresso-books this week, as i'm basically running the shop myself 6:30 - 4pm.. we're very short handed and they didn't have much time to train me. luckily i learn fast ... and still open to any suggestions you guys have!

the only weird thing about the place is our basement. it originally housed slaves (o.O) - and by housed, i mean, they were literally chained to this low-ceiling, damp place.. and our bottled beverages and beers are stored down there. it's always creepy when i go down there.

but, beyond that, i am certainly enjoying my introduction to the world of making good coffee. and hello to everyone again.

Hi! My name is Jesse Rose, I'm 21 & happily married. I recently joined this lovely community and currently work at a small local coffeeshop in town.

While I love my job, my ultimate goal is to own my own coffeeshop someday.
I have a lot of ideas, and keep a book for all of them.

I've been perusing the internet for information on starting up, mainly looking for various vendors/products. I've been pretty unsuccessful.

So I'm asking if any of you have any resources that would be helpful.
-Information on starting up (costs, requirements, etc)
-Information on different coffee roasters, syrup/flavoring vendors, etc...

So my university (university of oregon) has a coffee shop that is on the meal plan right across from my dorm. Amazing! Except that their baristas are horrible... They have lots of bad habits but I think their biggest problem is that they dont adjust the espresso grind (they also grind lots of espresso at once) I counted a 5 second shot this morning. EWW! I dont want to go up and arrogantly tell them what they should be doing but I also want to take advantage(as do other students) of meal plan coffee.
Any ideas on how I could approach them and what I should say? People are so touchy about coffee sometimes!

months after my old shop unfortunately closed (RIP de danann) i think i found another job. it's a place that opened recently near me that has a coffee bar and...a huge SCRAPBOOKING ROOM! well, rooms even! it's really awesome inside. sadly their espresso machine is fully automatic and i don't imagine many people come to it but at least when someone does, i will make them a decent drink with what i have to work with. i'm excited to have anyone offer me a job because my facial piercings cause me problems, but not everyone is an asshole. i'll also get to help people with photoshop and give them advice about what they're scrapbooking which i would love! of course no benefits and crap pay, since i can never work at a place that has money haha. i was just excited to share about my new indie shop owned by another hubby & wifey as i just got off the phone with her. JOBS!! YESS!

Since Bellingham IS the 4th highest in coffee-shops per capita in the nation, I figure SOME of you must be baristas (who don't work for me, that is).

Are you tired of being called "just a latte slinger" and having to explain your craft to your family and friends? Does it piss you off that people think that your job requires no skill or education?

I want to tell you about the Barista Guild of America, which is a trade guild that YOU can be part of. It's common for professions to organize into a guild or association to create a force in the public eye and keep abreast of new trends and education. However, I feel the BGA is especially unique because this is a grass-roots effort to organize at what's usually considered the entry-level step of the industry.
